Enchilada Sauce
INSTRUCTIONS
This sauce comes together quickly once you get started, so measure the dry ingredients before hand. Keep the chili powder separate, but the other spices can all be combined.

In a medium-sized pot over medium heat, warm the butter until it’s melted then add the flour. Stir or whisk constantly, once it’s bubbly add the chili powder and continue to stir constantly for 30 seconds to a minute.

Next Add the tomato sauce while continuing to stir and mix in the other spices. Once everything is well integrated, add the water and mix well (Using warm water is advisable as it will save you having to reheat the entire batch).

Raise heat to medium-high and bring the mixture to a simmer. Reduce heat to a low simmer and cook for about five minutes.

Remove from heat and season to taste.

* 3 tablespoons butter
* 2 tablespoons flour (all-purpose flour or gluten-free flour work!)
* 1 3/4 tablespoon ground chili powder
* 1 .5 tablespoons ground cumin
* 1 teaspoon garlic powder
* ¼ teaspoon dried oregano
* 2 teaspoon salt, to taste
* Pinch of cinnamon (optional but recommended
* Freshly ground black pepper, to taste
* 16oz tomato sauce (no salt added) 
* 1.5 cups water
