French Baguette
  • Mix dry ingredients
  • Add liquids
  • Mix for 5 to 8 minutes and ingredients are well combined
  • Cover bowl with plastic wrap and let rise 2 hours
  • Fold in once in four directions (on a wet surface with wet hands) and let rise 1 hr
  • Fold in once in four directions a second time  (on a wet surface with wet hands) and let rise for 1 hour
  • Place dough on a well floured surface, flour the top and cut in half
  • Shape each into ball
  • Let rise 15/20 min
  • Grab side, fold in, press on edge, repeat for whole bread
  • Shape with loose rolling and place on a couche and cover for 1 to 1.5 hours
  • Preheat oven to 415° to 420° and place a pan of water on the bottom rack
  • Total 20 mins. Rotate after half time
