Flan
Place a baking dish with water in the over and preheat oven to 325° ... the flan dish will be placed in the bath to cook so make sure there is not too much water in the baking dish

1. Combine Sugar, Eggs and Vanilla
2. Heat milk in a pan to approximaly 130 degrees
3. Using a whisk or hand mixer, slowly (so the eggs do not cool) pour the milk into the sugar/egg/vanilla mixture, thoroughly combining
4. Pour Caramel into the bottom on the dish, covering thoroughly
5. Slowly pour the egg mixture into the dish (using a strainer) and remove any foam/bubble (this will help the texture of the custard)
6. Place the dish in the preheated bath and cook for approximately 1 hour

Allow the flan to cook to room temperature, then place in fridge to cool and set.
