Mix dry ingredients
Add liquids
Mix for 5 to 8 minutes and ingredients are well combined
Cover bowl with plastic wrap and let rise 2 hours
Fold in once in four directions (on a wet surface with wet hands) and let rise 1 hr
Fold in once in four directions a second time (on a wet surface with wet hands) and let rise for 1 hour
Place dough on a well floured surface, flour the top and cut in half
Shape each into ball
Let rise 15/20 min
Grab side, fold in, press on edge, repeat for whole bread
Shape with loose rolling and place on a couche and cover for 1 to 1.5 hours
Preheat oven to 415° to 420° and place a pan of water on the bottom rack
Total 20 mins. Rotate after half time
