Tuna Cakes

Mix ingredeints thoroughly. 

 

Roll into balls the size of a plumb and then work into a patty shape.

 

Cook 3 to 4 at a time by placing them in pan ( over medium heat ) with a couple tables spoons of vegetable oil in the pan.

 

Cook until golden brown on both sides (the middle should be firm). This should only take approximately 3 to 4 minutes.

Remove from heat and place on a plate covered with paper towels to remove the excess oil. I suggest using the over at its lowest temperature (typically 170 degrees) to hold the finished Tuna Cakes while you cook the rest.

Tuna Patties
  • 4 five ounce cans tuna (in water)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp celery salt
  • 1/4 tsp dill
  • 3 tsp Dijon mustard
  • 1/4 cup cornmeal 
  • 1/4 cup flour (I use gluten free, but all purpose will also work)
  • 1/3 cup fresh red onion chopped fine
  • 3 eggs
  • 1/2 tbsp of finely chopped jalapeño

Tartar Sauce
  • 1/2 cup Mayo
  • 1/2 tablespoon Capers
  • 2 tablespoons White onion (fresh)
  • 1 tsp apple cider vinegar
  • 2 tablespoons dill relish
  • 1/2 teaspoon pickled jalapeño juice
